Tomato Paloma

Fly high like a dove with this summer Paloma 🕊️

I know y’all are probably tired of all these tomato cocktails but you just gotta DEAL WITH IT BECAUSE THIS SHIT BANGS HARD IDC The 50/50 tomato marg from last year is STILL my favorite cocktail OF ALL TIME so i decided to take the salted tomato syrup and put it in a Paloma and BOY LEMME TELL YA tomato + grapefruit is just a punchy / savory / refreshing / life affirming slammmmerrrrr of a pairing. LEMME KNOW IF YOU TRY IT ENJOYYY HAGS !!

PS I will also include a version with fresh grapefruit juice in the recipe card notes 👍

For our very, VERY GOOD recipe you will need:

Salted Tomato Syrup 🧂🍅

•150g ripe tomato

•150g white sugar

•1.5-3g salt (1-2% depending on your taste)

1. in a sealable container, add cut up tomatoes and cover in sugar

2. seal and let sit overnight on the counter, stirring occasionally

3. once the juice has been pulled from the tomato’s and sugar is mostly dissolved, blend and fine strain

4. weigh the yield of your strained syrup and add 1-2% of the weight in salt, stir to dissolve

5. bottle and enjoy 👍

*makes around 250ml depending on tomatoes*

Super Grapefruit Juice (acidified) 🍊

•100g grapefruit peel (ruby red)

•48g citric acid

•12g malic acid

•2g MSG

•10g sugar (white)

•30g ascorbic acid (optional—helps shelf life)

•1000g water

•juice of peeled ruby red grapefruit

1. Peel grapefruit & blend peels with all other ingredients until fully emulsified.

2. fine strain and bottle.

HOT TIP (save strained peels for oleo)

What is the shelf life of salted tomato syrup?

About 1 month.

What is the shelf life of super juice?

About 1 month, but more like 6 months if kept frozen.

Ingredients

  • TOMATO PALOMA 🍅🕊️
  • •1.5 oz tequila blanco
  • •1 oz super grapefruit (acid adjusted)
  • •3/4 oz salted tomato syrup
  • •2-4 oz sparkling water

Instructions

    add tequila, syrup, and juice to a shaker tin, shake hard, and fine strain over ice. top w/ sparkling water, garnish with salted tomato wedge & enjoy 🫧
