Tacos Al Pastor is one of the most iconic tacos in Mexico and one of our absolute favs. Fun fact: the method of preparing and cooking the al pastor taco on a rotating spit was brought to Mexico by Lebanese immigrants and adapted with Mexican ingredients making it one of the GOAT fusion dishes of all times. 🌮
For our very, VERY GOOD recipe you will need:
Achiote Paste or Recado Rojo
Achiote paste and Recado rojo are very similar ingredients. Both are seasoning and coloring pastes or marinades that include bright red annatto seeds as well as other spices and aromatics like garlic, cumin, and so on.

What is Achiote Paste?
Achiote (AH-CHEE-O-TÉ) paste is a commonly use seasoning and coloring ingredient whose key ingredient is the bright red annatto seeds or the seeds of the achiote tree.
What is Recado Rojo?
Recado (or achiote paste) is a common spice blend used in Mexican cuisine— particularly the cuisine of the Yucatán peninsula and includes annatto seeds, oregano, cumin, clove, cinnamon, black pepper, allspice, garlic, and salt.
Margarita Al Pastor
Ingredients
- 1.5 oz Mezcal Espadin
- 1/2 oz Nixtamalized Corn Whiskey
- 1.5 oz pineapple juice
- 1 oz Recado Rojo syrup
- 3/4 oz Super Lime Juice
- -ALT Recipe if you have Nixta-
- 1.5 oz Mezcal Espadin
- 1/2 oz Licor de Elote
- 1 oz Pineapple Juice
- 3/4 oz Super Lime Juice
- 3/4 oz Recado Rojo Syrup
Instructions
Shake
fine strain over ice
garnish with pineapple fronds
